Measuring spoons Measuring spoons are used for commodities such as powdered spices, dried herbs, salt, baking powder, yeast, liquid flavouring extracts, alcohol, food colourings, etc., where accuracy is important to ensure the correct flavour, rise, shade of colour, etc., of a finished product, and to prevent wastage of expensive commodities such as vanilla extract and liqueurs. Stainless steel measuring spoons are very durable, whereas some plastic sets may break or deform in hot liquids. The capacity of each spoon (how much it holds) usually refers to a level spoonful, not heaped. The most useful sets of measuring spoons include the following: 1 tablespoon (tbsp) /20ml ½ tablespoon /10 ml 1 teaspoon (tsp) /5 ml ½ teaspoon /2.5ml ¼ teaspoon /1.25ml ⅛ teaspoon /0.6ml Garlic crusher (sometimes called a garlic press) These tools usually comprise two long handles, which form a lever when brought together to push peeled garlic cloves through a grid of small holes. This process extracts the garlic oil, pulp and juice, in order to impart as much flavour as possible to a dish. Depending on the brand and model, they can be rather challenging to clean, but usually work well to achieve the desired culinary result. Garlic can also be grated using a ceramic or metal grater.
