In the UK cow milk is used more than any other. The flavour, fat content and colour of cow milk is determined by: • the breed of the cows • the season when the milk was produced • the type of grass or ‘meal’ eaten by the cows • the age and general health of the cows. Milk can also be obtained from goats and ewes (female sheep). Consumers may choose to use goat and sheep milk due to personal preferences or dietary needs. From milk we can produce butter, cream, cheese and yoghurt. A selection of dairy foods
